Excellent productHave had Chicago Cutlery knives since I got married 28 years ago. I broke the tip off the original and needed a replacement. It's as sturdy and utilitarian as the original. 5AverageFor the price, it s an acceptable knife, but I had hoped it d cut sharper. It doesn t. It s just a plain knife, nothing special. 3Another american made icon gone the way of "made in China"The craftsmanship of this American "icon" in kitchen knives is far below what Chicago Cutlery used to make. I have many Chicago knives that are 20 + years old and have always been the bench mark for excellence. The handle on this "made in China knife" is VERY blocky making it uncomfortable to hold. The grind on the blade and steel quality is far rougher than the "old" version(s). I am EXTREMLY disappointed in what Chicago Cutlery has allowed their product to become. 3Chicago Cutlery remains good quality!It matches my set nicely, a knife option I never had in the set. It seems to be made virtually the same as my original 30 year old (at least) set The wood edges are slightly sharper than the original, but its perfectly ok with me....the blade came VERY sharp! 5Poor quality and value, not nearly as good as the old version despite the superficial resemblanceSo after being stupid using my knife to break apart some chicken that was still pretty frozen, I searched for a similar utility knife to replace it and lo and behold they had the "same" knife available. I had inherited this knife years back and the version I have is at least several decades old. I didn't expect the same level of quality given everything has gone down over the years but this was clearly quite lower and quality than the version I had despite looking almost the same.Right out of the box it was extremely dull. Well parts of it were dull... other parts were razor-sharp and I managed to slice my finger while struggling to cut through an onion. The blade on this one is quite a bit thicker and it does not slice nearly as easily as the old one due to this. It tends to jam as you try to make thin slices. As it was pretty low cost it wasn't worth the hassle of returning so it's now been relegated to cutting thick/frozen meat where the thickness of the blade isn't an issue or for general utility like cutting open cardboard boxes or cutting open the plastic packaging to the knives I bought to replace this one. 1Great QualityNothing like Chicago Cutlery, great knife. 5Review as requestedI was skeptical of Chicago Cutlery since the company went to China.....the reviews have only been lukewarm(doesn't hold it's edge). Anyway they all arrived and my wife is thrilled to have gotten 4 varied knives. I bought a sharpening tool at local Ace Hdwre. We have the exact set that was given to us as a wedding gift 38 years ago(US made). They have been Most superior and still cut and slice as the day they were new.....We shall see if the quality is still there. Hopefully, the company will come back as I am not prone to support US companies that left for China! 5I love it!Years ago I bought a set of Chicago Cutlery knives (5 knives plus sharpener). I use them all the time, but the six inch utility knife disappeared. I've tried other utility knives as replacements and I haven't been happy with any of them. This is a perfect match for the original, and I'm so glad to have it back. Sturdy blade, good grip, balanced well. Wish I knew how to get my other knives as sharp as this one! 5*NOT* HOLDING UP <9 MONTHS (2-STAR KNIFE, BUT +1 STAR CUST SVC)My dad purchased the 61S pre-2001 from an outlet store in Arizona. The construction was fantastic (good balance, heft, handle form) and it has served us well for more than 15 years. So when it came time to get knives for me going off to college, we found the 61SP online (6E15M stamped on the blade next to Chicago Cutlery logo). The construction difference of the newer SP was noticeable...the wood was a little blockier and rougher, the blade was courser with a shorter main blade bevel, but it was still seemingly sharp and balanced well.After 6 or so months, the blade on the newer SP has started to rust higher up on the heel (not the edge). Then, the middle of the three rivets fell out, like it was made of substandard brass or something. Note that I treat my knives like my dad taught me--handwash only, dry the blade, never store wet. And I used it only infrequently in the dorm (unlike the original utility knife which we used nearly daily at home and is holding up fantastically).My understanding is that World Kitchen acquired the CC name in 2003, moving manufacturing from Milwaukee, WI (USA) to somewhere in China. That would be OK if the newer knife held up even half as well.To World Kitchen's credit, however, they are honoring the lifetime warranty and sending out a replacement. The fact that they completely stand behind their product does speak volumes for their customer service, so +1 star from my original 2 star ranking. They also recommended using Barkeeper's friend on the blade to remove the rust, sending a sample with the knife. If the replacement holds up well, I will revisit and raise my rating. 3greatI've had this same knife for atleast 15 years. I have used this knife for just about anything in the kitchen. Since I am not living by myself anymore I had to buy 2 more just to be able to cut something. My original knife is still like new and I sharpen it myself often. As with all wooden handled knives, hand wash it, do not throw it in the dishwasher. The heat from the dishwasher also messes up the edge of the blade anyway. Also use cutting board oil or mineral oil on the handle once in a while so it does not dry out and crack. Chicago make good quality knives. I love this knife. 5
