POOR SHAPE DESIGN & INCORRECT SIZING First let me say that this company, Fat Daddio's usually makes top line bakeware. I own a lot of it and would buy any other items in a heartbeat, but this pan is disappointing.The shape isn't like a normal pie pan. It's not angeled enough on the sides to be considered a pie pan in my opinion. It's more like a cake pan and is straighter on the side than most pie pans. This sizing is also incorrect. I've included some photos of the top and sides so you can compare it to a normal shaped pie pan. The Fat Daddios actual pan size including the lip is a hair under 10", but the inside well (where the filling goes) is only 9.5"! Usually pie pans are measured from the inside well at 10" & then add a lip on the outside for the crust which should make it total of about 10.5". So in conclusion, my professional opinion as a caterer and professional baker is that the the sizing is incorrect which does matter because it affects how many ounces it holds, and the design is disappointing so I can't recommend it and it's going back. 2Good heat distrubution, great weight, look and cook great. These are really nice pans. They are larger than one serving of pot pie. More like a two MAN size pie. I say that because my husband said no, we shouldn't share ONE pie, he wanted a whole pie cause you know, they are small. Well, we had 2 days of leftovers from our TWO pies. Next time, I am sure he will share. They are DEEP and STEEP. That means a little harder to get the pie crust down into it and still have it a thin crust. You might find this a positive or negative depending on your use for it and your pie crust shaping skills. Steep sides means you get more volume of PIE than a very sloped pan would give you. I haven't tried for custard pies but think those would be good and easier to make as it is a crumb crust to build up the steep sides.The crusts came out nicely browned on the top, sides and bottom so that means the pan had good even heat distribution. The lip is big enough to make a nice shape around the edges.Nothing negative to say except they are kinda expensive as I bought quite a few for Turkey Pot pie using leftovers. I make meat pies anytime I cook a large piece of meat, that means we don't get tired of the meat and have quick meals for later to just pop in the oven from the freezer. 5smaller than suggested I ordered the 4 inch pie pans... I can use them for nothing I had in mind.. They are very, very small. The bottom of the pan is only 2 inches across and the top inside usable space is UNDER 3 inches.. Sooooo.. why do they call this tiny, tiny pan a 4 inch pan?.. This is how they get their measurement.. They us the very wide outside lip edge for the measurement. This is a very deceptive listing.. This is a tiny, tiny pan and if it is what you knew you were ordering, I am sure you would be OK with it.. BUT.. I am not.. I thought I was getting a 4 inch pan.. That would be 4 inches of USABLE surface to cook in.. This is not... I did order the 6 inch pie pans also.. and I LOVE THEM.. I will conclude with the fact that these are a very high quality,, nice and thick and have a great feel.. 2So glad I did My family asked me to cook a chicken pot pie. My pie pans on hand were not deep enough nor big enough. I have never had a pie pan larger than the standard pie pan so I went in search of such pan on Amazon. So glad I did. I love this pan. The pot pie size was perfect for dinner to feed four.In the future, I will use this size pan for pies during holidays that we have people over such as Thanksgiving. I wish I had this size years ago. I will be ordering another one. Clean up was easy too. 5The pan is 10 in, not the Pie I measured this, and the wide outer edge of the rim is where they get the 10 inch measurement. So it's not going to be a 10 inch pie. :^( 3I like to do one pot meals and with this pan ... This pan is exactly what I was looking for. I like to do one pot meals and with this pan I can put everything in together, toss in the toaster oven and be done. The clean up is a breeze and, so far, as long as I use a little cooking oil nothing sticks. It is sturdy, has good depth and is about the size of a DiGiorno pizza. (Not inside but around the entire pan) I have a larger roasting toaster oven but I had to bend up the sides of the pan a little bit to make it fit... I am fine with that. FYI: I did not bend with my fingers, had to use pliers- it is that thick. I will soon purchase another pan from these guys. 5Baking Pies for One After searching for smaller then 9" pie pans and larger than 5", I finally found what I needed with Fat Daddio's pans. Besides the great utility they have which meet my needs-what I found to be even more satisfaction was my call to Daddio's home office asking for the best way to break in the new pans. The associate I talked with was informative, kind and one of the most professional customer service personnel I have ever experienced. Her advice to use a flour based spray to coat the pans worked...no sticking involved...thanks! 5NOT a true 6 inch pan I'll start by saying I LOVE this pan.. Great quality.. It is very thick and sturdy and easy to use.. I will be using them ( I bought 6) ..,often. Now I will tell you the down side.. This pan measures just under 5 inches of usable space at the top of the inside of the pie pan.. The makers are counting the very wide outside brim to get the 6 inch measurement.. I also bought the smaller pie pans and they are done the same way.. Soooo. IF you know this and are ok with the pan being about an inch or more smaller in usable size.. you will enjoy this. I would order more and recommend them to anyone wanting an individual sized pie pan or a pan for smaller desserts..Now.. I have to go and bake some pies! 4Great for gluten free cooking, pan prep, deep cleaning, olive oil warning! I use these for my gluten free pie crusts and they work wonderfully!! They don't stick at all!!! I didn't use anything to prep it on the first use (and was a little worried), but they came out beautifully!!! They are EXACTLY 9 inches across the top. I bought 3 more of these because I make a LOT of pies, and I was so happy with them!Inside dimensions of the pan on top are 4 7/8" X 8 7/8". Bottom outside dimensions are 4 3/4" x 8 3/4". The corners are not squared but kind of rounded. Pan number BP-5643. Freezer safe, oven safe to 550F. Seamless, so that is good at least. Rolled edge top. Made from anodized aluminum. Due to the efficiency of anodized bakeware you may need to reduce recipe temperature or timing. Temperature reductions of 5 to 25 F. They are very sturdy.Do NOT use Olive Oil (or spray containing olive oil) with these pans!!! The manufacturer has left a warning that it will leave a sticky residue on them. Life is hard enough without making your pans HARDER to use.To maintain the performance of Fat Daddio s Anodized bakeware, simple hand washing or soaking in warm soapy water, followed by a quick rinse and towel or air drying . Do NOT use dishwasher detergents, bleaches, harsh chemicals, abrasive soaps, wire brushes, scouring sponges, or sharp tools when cleaning as they can damage the surface of your bakeware. IF you HAVE put your fat daddio pan through the dishwasher......I have a tip at the bottom of my post of how to restore it.Pan prep:BREADS: For first time use recommend butter, coconut oil, canola oil, lard, or shortening. If needed, dust with flour for sweet breads and cornmeal for yeast breads. After the first few uses the baking surface will build a wonderful patina that will eliminate or minimize the need for pan prep.Sweet breads ~ you can dust with flour. Or use a spray with flourYeast breads ~ you can dust with cornmeal, to provide additional release.Since I bake gluten free/grain free, I just use coconut oil &/or pastry paper, which is why i use Fat Daddios in the first place. It is AWESOME for gluten free/grain free cooking!!After the first few uses the surface tends to build a wonderful patina that will eliminate or minimize the need for pan prep.PASTRIES AND COOKIES: Generally there is no pan preparation needed for these items. Most recipes have a higher fat content than cakes and provide a very effective release. If you are baking pastry or cookies with a low fat content you can simply line the sheet with a silicone baking mat or parchment paper.PIES, TARTS, QUICHES: Unless your recipe specifically calls for a grease-release preparation, these items generally do not require any pan prep. Most crust recipes have a high butter and fat content that will provide a natural release.CAKES: A traditional method using unsalted butter and flour is recommended. Shortening or lard can also be used effectively in place of butter. Many commercial spray release products are also very effectiveMy pan just went through the dishwasher!!don t throw the pan away as it still has a lifetime of baking performance ahead! First try seasoning the pan with a few drops of good quality baking oil (NOT OLIVE OIL) and a cloth. This works well for removing most phosphate residue. For extreme discoloration you may need to coat the entire pan in shortening or butter and place on a cookie sheet. Bake the pan at 300 degrees for 10 minutes. Let the pan cool for a few minutes. While still warm, wipe the pan clean with a towel. This process may not return the off-the-shelf beauty it once had, but will effectively season the pan for future use.Let's face it bakeware can take a beating in the kitchen. After continual use it will build up a patina from the grease and butter. Most professional bakers don't mind this buildup, as it actually increases the performance of the pan. Baked goods come out even easier. But many home bakers don't like the look of a well-seasoned pan and want to restore its beauty. It can be achieved with a little effort. Learn how to deep clean your bakeware...How to Deep Clean Your BakewareTools NeededWell used bakeware panSoft clothWarm waterBar Keepers Friend Cookware and Cleanser Polish (Be sure that you get the Cookware Polish, as it has a non-bleach formula that is recommended for cookware).Run bakeware under warm water. Sprinkle pan with Bar Keepers Friend Cookware and Cleanser Polish.Gently rub the powder into a paste, and allow to sit for 1-2 minutes. Stubborn stains may take up to 5 minutes.Rinse with warm water. Stubborn stains may need to be worked on again.So clean, that you can see my image reflected in it! 5Nice heavy weight Very important to hand wash! Easily done, but I did not look at the description and placed one in the dishwasher. It is now dull and dark. Still bakes the same though.
