Blade edge finish not up to par. I didnt have any issues with the handles varnish smelling like some other reviews.No smell and very well finished. It's a very lightweight and well designed knife. I didnt find it had as sharp of an edge that I would have expected for the price and reviews. I just had to pass them on a finishing stone to get them up to par. We cook and use our knives a lot and these replaced our Chicago Cutlery blades we have had for 17 years and had received as a wedding gift. I dont think these will make it 17 years. While ideal for steak the edge profile is so thin soft items like butter stick to the sides. I have a little cheap Mercer pairing knife that has a thin blade also and butter wont stick to the sides of the blade like it does with these. Thinking it's just a lack of finishing oversight on their part. 3Lacking quality control Pros:- Sharp and have remained sharp for 7 uses thus far.- Fast shipping.Cons:-Quality Control Miss: As you can tell by the pictures 2 of these came with the expected finish. The others came faded and a variety of shades.-STINKY!! Heat washing creates these to leech a horrible smell. I tested one (marked in picture) in the dishwasher and that was a true mistake. I actually thought my dishwasher was broken and went to extreme methods of cleaning and diagnostics. The only comparison I can make is "sickly/decaying manure".-Low Quality: There is no weight to the handles and the random finishes can be prickly/sandy. In addition to the lack of quality control, scent and price - I was expecting at least a mid-grade set.Would I recommend? Overall no but I do believe they are the sharpest blades I've found for the price range. 2These knives do smell but it goes away I saw these recommended on America s Test Kitchen, and I ve been wanting some sharp steak knives. These do have a smell that s really unpleasant. And it s really obvious when the wood gets wet. I even noticed the smell transferred to my hands. That said, after several washes, they no longer smell. They re very sharp and sturdy. Despite the initial terrible stench, I d still recommend them. 4Very nice Like the Victorinox kitchen knives I've used, these feel light - almost dainty. The wood handles are nicer than the Fibrox ( which nixes running them through the dishwasher unfortunately) but they still don't have any "heft" to them. Some might think they feel cheap.But form follows function - they cut better than any steak knives I've used anywhere, hands down. The blades are thin, and extremely sharp. They cut through a decent steak like warm butter instead of sawing through like serrated blades, or hacking through like the blades of middling sharpness you tend to find even in fancy restaurants.Possibly because of the wood, these aren't quite the stunning value the Fibrox handled kitchen knives are. But they're very good, and I'd but another set with no regrets. 5The handles really do smell terrible. The other reviewers are absolutely correct--there is some sort of malodorous oil in the wooden handle of these knives, which is very difficult to remove.I have soaked them in hot soapy water and vinegar overnight a couple times, which has reduced but not removed the smell. I have also rubbed essential oils into the handles to try and cover it up.Despite that, they are great knives for cutting! Just a pity about the handles. 3Well Worth the $$$ Just like all other Victorinox knive, these are perfect (if not expensive!) What the heck...how often do you have to buy steak knives anyway? Never buy those dumb saw-tooth steak knives. Once I got these I threw my serrateds away. While you're at it get yourself the best knife sharpener made called the Chef's Choice 463 Pronto Santoku/Asian Manual Knife Sharpener by EdgeCraft. Both knives and sharpener are number one rated by Cook's Country/America's Test Kitchen. I gave my son the sharpener and a Victorinox carving knife and he is thrilled with it also. He's a meat smoker and carves everthing from ribs to chickens and said he's never used a finer knife. My wife loves her Victorinox steak and carving knives, too.Shoot! I can even slice bread loaves easily with it with far less ripping than those infamouse serrated bread knives. 5Great at first, but not holding up as well as I'd like. Not bad overall. I am a big knife guy. I love nice, hard knives. I treat my knives well.But steak knives such as these are often used directly on plates (not cutting boards) and tend to dull or chip quickly, so I wanted something that was functional, classy, and easy to work on without being too expensive (I'm NOT using my 63 HRC blue steel forged knives on stoneware plates).I've had these since a bit before Christmas. Out of the box, these worked very well. I don't have an HRC number, but they are not quite as hard a steel as I'd like and they are dulling faster than expected despite stropping after washing. That isn't too big a concern as I had intended these to be usable with a quick sharpener (since they are inexpensive stamped steel) but I was hoping that I would be able to delay using the sharpener and removing material for at least 3 or 4 months.The biggest problem is the handle, which is starting to splinter badly after only a couple months (and no submersion in water). I'm going to have to sand and oil the handles to keep them usable - which is more work than I had intended to put into a less-expensive knife set.Overall these are pretty nice everyday knives IF you're willing to do the maintenance. They look nice and work well. But personally I would not buy them again since they are a little too pricey to view as disposable and a little too maintenance-heavy for carefree everyday use.If future need arises, I'll either take a step down in quality/price to a more disposable set and let the quick sharpener workout every week until the knives are disposed of, or take a step up in price/quality so that I don't begrudge the maintenance. 4Unbearable smell I was so excited to receive these as I love Victorinox knives. I actually got rid of all of my other knives and have been replacing them with this awesome brand. They are incredibly sharp and cut through meat like butter. The blade itself was a little flimsy but I wasn't concerned about it. They're so sharp that there is no need to press hard at all. The knives are very lightweight. My only real concern is the incredibly strong smell of the handle. I washed these (by hand) and the smell is still just as strong. It smells very strongly of a barn full of animals. My hands even smell like the blade after washing them. These will be going back as soon as possible. I wish they offered this same blade with a different handle. I would buy them again in a heartbeat if they didn't reek! 2Account for these before you let your guests out I actually bought these by mistake. I was looking at them on-line and somehow got them into the cart and ordered with some other stuff. Once seeing them I couldn't bear to send them back. They really are beautiful. I have to make a decent holder for them rather than just sticking them into a drawer, hidden from sight. Sharp, of course. 5Fantastic knives. We have always eaten our steak with ... Fantastic knives. We have always eaten our steak with serrated "steak" knives which cause the meat to bleed out all of its juices, but when we tried these smooth blades, the steak cut like butter and retained all of its juice with each bite. You've got to try these. The quality is excellent too, with smooth rosewood, finished very nicely and made to last for many years, as long as you don't soak them in water. 5
